Pop’s Pizza was founded in 2019 to be best representation of “Pizza Napoletana” outside of Italy although the story began several years prior to that.  We scoured the streets of old Napoli and learned all the tricks behind the true “Pizza Napoletana.” While we like to play around with various techniques we adhere to the tenets of traditional Neapolitan pizza making standards as prescribed by the Association of Verace Pizza Napoletana. 

People ask us what makes a real “Pizza Napoletana” and we like to say that “you know one when you see one.”  Our pizzas represent the best of Napoli respecting its many years of history but also we integrate modern techniques and combine ingredients that will surprise you.  We start every day making our “impasto” using the finest Italian flour.  Then our dough is fermented for up to two days using our own proprietary sourdough, which we closely guard.  Then we use only the finest combination of regional Italian ingredients to make a very memorable pizza.
